I would personally say enchanting due to some Wrath and other disenchanted and converted materials you can get that are still worth a lot. I have every profession on exactly one character. All the others are dual gatherer with mining and herbalism while I have 2 with skinning. Alchemy and Enchant are the best flat out for mats and crafted items. That said, I make gold on professions from gathering and selling the materials. If there is a gambling sub-culture on your server, you may be able to make some money with the Card of Omens from Draenor Inscription. I only see cooking and alchemy as something viable to make a profit! Collection professions also guarantee some gold, but there is so much supply of items collected now, that sales prices can not be very high!
